Baking Chocolate Lava Cake with 9 year old Chef Cora

Yesterday I baked with a young, but very talented, pastry chef. When I met Cora earlier this week, she told me that she likes to bake, but rarely follows a recipe. I have to admit, I was dubious, but once we started baking, it was clear she knew her way around the kitchen. Spoiler alert: the lava cakes turned out perfectly.   • 3/4 cup of all purpose flour
  • 1/4 cup sugar, plus extra for ramekins
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3/4 cup semisweet chocolate
  • 1 pinch salt
  • 2 eggs
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • softened butter for ramekins
  1. Preheat oven to 350 degrees Fahrenheit. Line 3 or 4 ramekins with softened butter and dust with sugar.
  2. Mix together flour, sugar, baking soda, and baking powder in a medium bowl and set aside.
  3. Melt chocolate gently and set aside to cool slightly.
  4. Mix eggs, milk, and vanilla until smooth.
  5. Add egg mixture to flour mixture and mix until just combined.
  6. Add melted chocolate and mix until combined.
  7. Bake at 350 for 12 minutes. Serve immediately.
